The present study was carried out to investigate the potential of basidiomycete Auriporia aurulenta metabolize residues remaining from processing umbu, cajá, plum, and persimmon fruits for production natural aroma compounds using submerged fermentation. volatile obtained fermentation A. cultivated in these were extracted via stir bar sorptive extraction (SBSE) analyzed a gas chromatography-mass spectrometry (GC-MS) system. Esters alcohols main produced, with emphasis on 2-phenethyl acetate 2-phenylethanol, which mainly produced umbu residue. acid medium favored acetate, reaching its maximum value (11.38 mg/L) day 3.5, while higher concentrations 2-phenylethanol found basic medium, optimal (2.27 7th day. By varying pre-inoculum residue optimization this process, it possible double (24.47 obtain seven times concentration (15.56 2-phenylethanol. diversity expressive aromatic media agroindustrial indicate that their use as substrates is an economical environmentally viable alternative.
